stinky chicken
Stinky Chicken is a term of endearment in my family. My mom found this recipe in a cookbook by Christina Ferrari. It’s officially called something like “Honey-Dijon Chicken” but my family prefers our name. According to my dad, the house smells “stinky” while the glaze is being made and the chicken is cooking, but the recipe has become a family favorite nonetheless.
STINKY CHICKEN (glaze for 4-6 chicken breasts)
¼ cup margarine or butter
½ onion, minced
2 cloves of garlic, minced
¼ cup dijon mustard
½ cup honey
1 tsp salt
4-6 boneless, skinless chicken breasts
MELT the margarine/butter in a frying pan. Saute the garlic and onion in it, then add the rest of the ingredients. Preheat oven to 400°F.
SPOON glaze over chicken in a oven-safe pan with sides (casserole dish, cookie sheet with sides, 9x13 pan, etc.). If there is a lot of extra sauce, save some to spoon on top halfway through the cooking process.
BAKE for 1 hour, or until chicken is no longer pink in the center.
