mexican chicken stir-fry

This recipe can be served on rice or eaten by itself.

MEXICAN CHICKEN STIR-FRY
from Sweet C's Designs

1 tsp olive oil
2 chicken breasts, cubed
2 bell peppers
1 ½ cups broccoli florets
1 tsp cumin
½ tsp cayenne pepper
½ tsp paprika
½ tsp chili powder

BROWN diced chicken in large pan with olive oil, about five minutes.

ADD peppers and broccoli and continue to cook until veggies are slightly browned and softened.

STIR in spices with a little water to help disperse the spices over the items. Cook until water is completely absorbed.
