lemon chicken

This is a really simple recipe for chicken. A friend served it for dinner, and apparently the recipe comes from a former staff member at our school. It requires a can of cream of chicken soup (not the cheapest in China), but it is a quick and tasty meat for a main dish. I think I used prepared yellow mustard in the recipe, but you could experiment with other options.

LEMON CHICKEN (serves 6)

6 chicken breasts, diced
1 can of cream of chicken soup
2 Tbsp lemon juice
1 Tbsp lemon pepper
1 tsp prepared mustard.

MIX ingredients together in a bowl.

POUR into a casserole dish.

BAKE at 350°F for 1 hour.
